The first Assassin's Creed was released in 2007 and since our trip to Masyaf we've had a chance to visit Renaissance Italy, The Pirate Republic and even "The culmination of the Pharaoh Reign in Ancient Egypt" just two months ago. That's a direct quote from the survey Ubisoft sent to players in 2013.

Three out of eight settings featured in that survey were realized in games: "The advent of the mighty British Empire during Victorian England" in Syndicate, "The culmination of the Pharaoh Reign in Ancient Egypt" in Origins and "The confrontation between British colonists and native Americans during The American Revolution" in Assassin's Creed III.

A ResetEra user posted a survey that was released to fans from Ubisoft. The publisher asks them about their three favourite settings for an Assassin's Creed game. The survey includes fan favourite Feudal Japan and Viking invasions. "The Rise of Roman Empire in the Mediterranean Basin" seems like a safe bet, considering that Origins is apparently a start of Bayek's trilogy.
